Our farmstead cheeses take shape in the fromagerie, a few steps away from the milking room, and are carefully attended in the aging room.  The period of affinage may last many months depending on the type of cheese.

Certoux
The name certoux is a patois (dialect) word of the Savoie region of France meaning cellar. A semi-firm paste with a combination of naturally aged and washed rind gives this cheese a complex flavour with a pleasant tangy taste and a complex rind. It is a delightful cheese to consume with apples, pears or grapes. Aged over a month.

Cascadian Frechette
The rind has been washed several times through out its affinage (aging) and has taken on a  golden color.  This semi-firm cheese is approximately five weeks or more and offers a medium distinctive flavor.  Many find the rind very edible and it complements the rich paste.

Pur et Simple
This is a very pleasant cheese finished with a bloomy rind. This cheese pairs up wonderfully with roasted beets or sliced tomatoes with a balsamic vinaigrette.  Of course, it is wonderful on it's own.   $23.20 per lb shipping not included 
 

Tomme de  Sawtell
The rind is blue to tan with sometimes brown pigments and an earthy mushroom smell.  This is a mild cheese with small holes but full of flavour.  It is a wonderful cheese to snack on with a glass of Pinot Noir from Oregon, rustic bread and grapes! Aged for at least 60 days. $23.20 per lb shipping not included

Tomme Cuivrée
Copper colored is the result of a Brevi Linens washed rind with a semi-firm pale yellow interior. This complex buttery flavor cheese offers a slight hint of sharpness. Rustic in appearance, this rind protects a cheese that is aged approximately 75 days.

Tomme des Vignes

Is a wonderful farmer’s tomme that should be a daily staple. Rich with nutty simplicity but with some sharpness, this cheese takes on the terroir of the Willamette Valley. It is ritually washed in balsamic vinegar and its affinage last several months beyond the required two months. Ingredients: Raw goat’s milk, cultures, salt, rennet, enzymes. Tomette Rustique (new)

Rustic it is!  Hand pressed during the summer months, this is a wonderful tomme with a big taste and yet has great subtleties.  Aged beyond two months.  Ingredients: Raw goat’s milk, cultures, salt, rennet, enzymes, annatto.  . Weight 3-4.5 lbs wheel.  $23.20 per lb shipping not included
